Breakfast Cookies

Mix together:
2 cups brown sugar
2 1/2 cups rolled oats
4 cups of flour (I use part whole wheat flour and part unbleached all purpose flour)
1 T baking powder
1 t salt
1 1/2 teaspoons cinnamon

Mix and add to above:
1/4 cup canola oil
1/2 cup Lighter Bake Prune Puree
2 T water
5 egg whites or 3 eggs
1 1/2 t vanilla extract

After wet and dry ingredients are mixed together, add:
chopped walnuts.

Drop onto cooking-spray coated cookie sheet and, with water-moistened fingers, flatten slightly. Bake at 350 for 8-10 minutes, depending on size. DO NOT OVER BAKE.

Options:
  • Omit cinnamon and add in chocolate chips, freshly ground coffee and cocoa powder.
  • Add in any combination of nuts and/or dried fruit.
  • Put entire batch on a cooking-spray coated cookie sheet and bake, then cut into bars.
