Simple Chowder (with variations)

2-3T Olive Oil
1/8 to 1/4 cup bacon crumbles
2 cups of diced onions
2 T garlic

4 cups of chicken stock
32 oz package of frozen southern style potatoes
*choose option below

1 cup half and half
1 cup milk
2 T butter
Salt and pepper to taste

Saute onions, bacon and garlic in olive oil. Add chicken stock, potatoes and and optional add-in. Simmer until potatoes are tender. Reduce heat and add half and half, milk, butter and s&p to taste. Warm through and serve.

Optional add-ins....
2 cans diced clams, not drained
3 cups of cooked, cut up chicken breast and 2 cups of cheddar cheese (add cheese with milk)
2 cups of cooked salmon
3 cups of corn and 2 cups of cheddar cheese (add cheese with milk)
meat from a rotisserie chicken, skin discarded
